This week’s meal plan

The kids go back to school this Wednesday,  so I’ll be spinning a lot of plates, juggling work, school, kids hobbies, after school clubs, out of school clubs and sports. I manage better when I’ve prepped ahead, I can make sure we’re actually having meals as opposed to fridge raiding or grabbing a quick sandwich, I can minimise waste, and by checking what I already have in, and writing a list of what I need to buy, it helps me stick to a budget, something I’m trying to get better at.

Today, we’re having bubble and Squeak,  something we have regularly on a Monday,  because we usually have a roast dinner on a Sunday and have plenty of veg left over, depending on where you are in the world, you may not know what it is – its basically veg mixed with mashed potatoe and fried up until you have yummy  crispy bits, or you can form patties and fry, either way, I love it ❤️
